Tuna Salad Lettuce Cups
Ingredients
2 (5 oz.) cans tuna
½ green bell pepper, chopped
½ red bell pepper, chopped
½ small sweet onion, chopped
4 large leaves romaine or butter lettuce
For lemon-herb dressing:
Juice of 1 large lemon
2 Tbsp. Dijon-style mustard
3 Tbsp. avocado oil
1 tsp. garlic powder
½ tsp. salt
1 tsp. Italian seasoning
Directions
In a large bowl, combine tuna with bell peppers and onion. Use 2 lettuce leaves each to form lettuce cups and evenly fill with tuna mixture.
In a small bowl, whisk together all dressing ingredients. Drizzle dressing over lettuce cups and serve immediately.
