Grilled Salmon & Mango Salsa
Ingredients
For salmon:
4 (6 oz.) skinless salmon fillets
3 Tbsp. avocado oil
2 tsp. lime zest
3 Tbsp. lime juice
3 cloves garlic, crushed
2 tsp. thyme
Salt and pepper to taste
For salsa:
1 large mango, peeled and diced
1 red bell pepper, diced
½ red onion, finely chopped
1 avocado, diced
1 Tbsp. lime juice
1 Tbsp. extra virgin olive oil
1 Tbsp. coconut water
For garnish:
Lemon wedges
Fresh thyme
Directions
Place salmon in a gallon-size bag. Whisk together remaining salmon ingredients, add to bag and refrigerate for 30-60 minutes.
Add all salsa ingredients to a large bowl and toss to combine. Refrigerate until ready to serve.
Grease grill grates with oil and preheat to medium high. Grill salmon for 3 minutes per side or until cooked through.
Garnish with lemon wedges and fresh thyme. Serve with prepared salsa.
